Chouilly
Chouilly, a village located in the Champagne region of France, is known for its excellent vineyards that produce some of the most prestigious grapes for champagne production. The vineyards of Chouilly belong to the Grand Cru classification, indicating that they are among the best vineyards in the Champagne region. Interestingly, there are only 17 villages that have achieved the prestigious Grand Cru status in the Champagne region, including Chouilly. The magical process of Champagne
How is it made?
Harvest usually begins in September, with grapes carefully picked by hand to avoid damage. Each pressing carefully processes 4,000 kg of grapes, resulting in up to 2,550 liters of must. This must undergoes its first fermentation in steel tanks for about 2 weeks. After fermentation, various grape wines may be blended together to create the intended flavor profile.
The blended result is bottled with a temporary cork or crown cap, known as Tirage, for the second fermentation in the bottle. Now aging begins, with the bottles kept in cool, dark cellars for months to years. During this time, the champagne develops its complex flavors and bubbles(about 47 million). Periodically, the bottles are turned and tilted, a process called Remuage, to lower the yeast sediment to the neck.
The next step is Dégorging, in which the frozen neck of the bottle expels the temporary cork due to the built-up pressure of the frozen yeast sediment. After the sediment is removed, the bottle is replenished with a special mixture of wine and cane sugar, known as Liqueur d'expédition or Dosage, to regulate the sweetness.
After dosage, the final cork is placed on the bottle with a plate and wire structure called a Muselet. After a short period of often up to 3 months, the champagne is immediately ready for consumption (needs no aging).
